I have never really missed bread but since November 2011 when I discovered this, I have eaten bread for the first time in 13 years.
It is from the French Oven and it is made from spelt flour, which contains only a tiny amount of gluten and the bread itself contains only a small amount of yeast, which is better for those of us prone to candida.
It was delicious and I had quite forgotten what bread tasted like, and oh the joy of cheese on toast after all these years!

Melanzane alla Parmigiana is an Italian dish made from aubergines, tomatoes, mozzarella and parmesan cheeses which tastes a lot like lasagne but without the pasta. It is a great find and available at Panis as well as other Italian restaurants.
